Green Pea Fritters

Light but filling and packed with nutrients, they make the perfect lunch or a tasty addition to a BBQ.

Quick and easy to make, these Green Pea Fritters can be adapted to suit all dietary requirements.

Ingredients

200g frozen peas (thawed)

1 small garlic clove, minced

2 spring onions (or ½ small red onion), finely chopped

1 egg (SWAP flax egg for vegan)

25g rolled oats, blended
SWAP for chickpea (gram) flour (GF) - higher in protein too

1 tbsp fresh mint or parsley (optional)

Zest of ½ lemon

Salt & pepper to taste

1–2 tbsp extra virgin olive oil for frying

Method

In a food processor or with a fork, mash the peas until chunky (not completely smooth).

In a bowl, combine the mashed peas, garlic, onion, egg, oats/flour, herbs, lemon zest, and seasoning. Mix until a sticky batter forms. Let it sit for 5–10 mins, if possible, to help it bind. The mixture can be left in the fridge at this point, until you’re ready to cook it.

Scoop the mixture and form into 5 small patties with your hands.

Heat the olive oil in a non-stick pan over medium heat. Cook for 5–6 minutes per side until golden and crisp.

To serve

Delicious warm or cold so they lend themselves to a make ahead packed lunch or picnic. Alternatively, spread some hummus on a plate and top with a warm Pea Fritter, serve with new potatoes and a salad
