Nutty Apple Breakfast Bowl

Make the most of winter apples with this nourishing breakfast bowl. With 11g fibre and 15g protein, it’s the perfect breakfast to kick start your day.  

By pan-toasting the oats with extra virgin olive oil, you create a nutty, almost granola-like taste which isn’t too sweet.

Ingredients      

½ cup Oats
SWAP for gluten free oats (GF) (VG)

1 apple sliced (skin on for more fibre)

1 tbsp extra virgin olive oil

1 tsp Maple syrup (optional)

1 tsp each: pumpkin seeds, sunflower seeds, hemp seeds, chia seeds (or seeds of choice)

15g chopped pistachios (walnuts work too)

2 tbsp Greek Yoghurt
SWAP for plant-based Greek Yoghurt (VG)

Method

Heat the olive oil in a pan over a medium heat.

Add the apple and cook for 2-3 minutes, until it softens.

Stir in the oats, seeds, pistachios and maple syrup. Keep stirring for 4-5 minutes until the oats are lightly toasted.

To serve: Top with yogurt of your choice, and a drizzle of maple syrup, if you fancy.
