Homemade Maple & Seed Granola

Packed with seeds, oats and all the good stuff, this granola will be the perfect start to your day.

Crispy, naturally sweetened and versatile. Can be made vegan and/or gluten free.

Ingredients

1 tbsp extra virgin olive oil

2–3 tbsp maple syrup

1 tbsp honey
SWAP for Agave syrup (VG)

2 tbsp apple sauce (from fruit pouches works great!)

1 tsp vanilla extract

300g rolled oats (or mix regular & thick porridge oats)
SWAP for Gluten free oats (GF)

50g sunflower seeds/50g pumpkin seeds

4 tbsp sesame seeds

100g flaked almonds

75g unsweetened dried berries

25g desiccated coconut

Method

Preheat oven to 130ºC (fan).

In a large bowl, mix the olive oil, maple syrup, honey/agave, apple sauce, and vanilla.

Add seeds and flaked almonds, then stir in the oats.

Spread evenly over 2 lined baking trays and bake for 15–20 min.

Remove, add berries & coconut, stir gently, and bake another 10 min, until golden.

Let cool completely on the tray, resist the temptation to stir! That’s how you get the clusters

To Serve

Enjoy with milk or Greek yoghurt of your choice, topped with fresh berries. For an extra fibre boost, stir in some chia seeds before serving.
