Elderflower Cordial

Capture the taste of early summer with this fragrant homemade elderflower cordial, infused with citrus and perfect served over ice.

Wellness doesn’t have to mean perfection. If a glass of elderflower cordial makes you to drink more water on a warm day, it’s a habit well worth keeping.

Ingredients      

2 unwaxed lemons (including rind)

1 unwaxed orange, sliced (including rind)

40g citric acid

800g caster sugar 

15 elderflower heads, stalks removed

1.5 litres boiling water

Method

Give the elderflower a quick rinse.

Place the sugar in a large heatproof bowl and pour over the boiling water, stirring until fully dissolved.

Add the fruit, citric acid, and elderflower heads. Stir well to combine.

Cover with a clean tea towel and leave to infuse for 24 hours, stirring occasionally.

Strain through a muslin cloth or fine sieve into a jug.

Pour into clean, sterilised bottles and store in the fridge.

To serve

Dilute to taste with still or sparkling water.

Serve over ice, with fresh mint, cucumber or a slice of orange.

Keeps in the fridge for up to 2-3 weeks.

Tip

Can be frozen in an ice cube tray for a hint of summer during the winter.
