Cherry Chia Jam

Preserving flavour doesn’t have to be complicated - it can be quick, easy and nutritious.

This nutrient-dense chia jam is one of the easiest, healthiest ways to enjoy Cherries long after their short season ends.

It can be stored in the fridge for about a week or frozen for up to 3 months. The chia seeds not only naturally thicken the jam but also add omega-3 fatty acids, protein, and soluble fibre, which supports digestion and helps regulate blood sugar.

Ingredients      

2 cups cherries, pitted and halved (fresh or frozen, I used frozen because they're cheaper)

1tbsp maple syrup (adjust to taste)

1 tbsp lemon juice

2 tbsp chia seeds

3 tbsp water


Method

Simmer the cherries and lemon juice over a medium heat for 20 minutes until the cherries break down and become soft and syrupy, stirring occasionally.

Add the maple syrup, taste and adjust sweetness if needed.

Remove from heat, stir in the chia seeds and 3 tbsp water. Let the mixture sit for 5-10 minutes to thicken.

Transfer to a clean jar, cool and refrigerate. It will thicken further as it chills.

To serve: Serve on toast, spread with nut butter and top with seeds. Alternatively, stir into Greek Yogurt or vanilla ice-cream for a sweet treat.
